Wild Garlic Soup
Well, so as to be en trend (!!) I thought I should keep up and share my most favourite recipe using wild garlic, in fact I have been making this recipe for years, it’s a true favourite of mine, and so good for you- helping combatting colds and also helping to reduce blood pressure amongst many other things, so give it a try and remember to let me know what you think!
- 1 tbsp oil
- 2 large onion-finely chopped
- 100g wild garlic (washed)
- 450ml stock (made double strength i.e. you are using enough stock powder
- or pods for 900m-I use 2 vegetable stock pods)
- 450ml cold water
- Place oil in a pan and once hot add the onion, cook over a medium heat until onion is cooked softened.
- Add the stock to the pan and bring to the boil. Once boiling add the wild garlic and as soon as wilted turn off the heat.
- Now add the cold 450ml of water (this is to cool the soup down quickly so as to keep that wonderful bright green colour)
- Blitz in a blender for best results, or you can use a stick blender if you do not have a blender. Or even in a nutri-bullet in small quantities (however if doing this do it once pretty cool).
- Season and reheat.
- If you managed to collect any garlic flowers use these to garnish.
